It’s actually more polite to use a person’s family name followed by the suffix “san” instead of “you,” “he,” or “she.” So yes, even when you’re speaking directly to Mr. Tanaka, it’s most respectful to say,

Tanakasan wa sushi ga suki desu ka?”, i.e., “Does Mr. Tanaka like sushi?”,

instead of

Anata wa sushi ga suki desu ka?”, i.e., “Do you like sushi?”
