Shio Ramen
Ingredients
- 7 cups water
- 1 pork bone
- 4 cloves garlic
- 1 spring onion
- 1 strip Kombu seaweed
- 2 (3.5 ounce) packets Ramen noodles
- 2 tsp salt
- 1 tsp chili oil
- 1 tsp minced fresh ginger root
- 4 green onions, sliced
- 1/2-cup bamboo shoots
Preparation
Place water in a large pot and bring to a boil. Add the pork bone, garlic, spring onion and Kombu. Reduce heat and boil for 3 hours, covered. Strain out the bone, garlic, spring onion and Kombu. In a medium saucepan combine the broth and the noodles. Cover and bring to a boil over high heat; stir to break up noodles. Reduce heat to medium and add soy sauce, chili oil and ginger. Simmer, uncovered, for 10 minutes. Garnish with green onions and bamboo shoots. |
